Mini Shortcakes

When 4th of July rolls around I’m always looking for something good, easy and red, white and blue!

These little mini shortcakes worked great! I grabbed these little mini plastic cups at Dollar Tree along with a pack of mini silver spoons to go in each one. Perfect!  

Here’s the recipe but you can adapt it any way you like! And this will work for all types of occasions! Different cake, different fruits…do you!

Ingredients

  • Premade presliced Cake from Grocery Bakery ( You can certainly make your own) I chose a vanilla creme cake

  • 1 (14-ounce) can sweetened condensed milk

  • 1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream

  • 2 cups milk

  • 1 can sweetened condensed milk

  • 1 (5-ounce) box instant cheesecake flavored pudding

  • Fruit (blueberries, raspberries, strawberries etc)

Directions

  • Cut your sliced cake into cubes
  • Mix the 2 cups of milk with the instant pudding. Let it sit until set about 5 minutes.
  • Add 3/4 to the whole can of sweetened condensed milk to pudding.
  • Add half of the Cool Whip. Reserve the rest.
  • Begin layering your cups with cake, pudding mixture, fruit, Cool Whip and repeat. Finish with Cool Whip on top and a few of your fruit pieces for garnish.
