Homemade Pimento Cheese

As I was making a new Tomato Pie recipe from the Beach House Cookbook, the writer called for her homemade “Ritualistic Pimento Cheese” recipe. I gave it go and yall…it’s good. It’s good awesome in the Tomato Pie recipe but it’s so good by itself with just crackers! Or in a sandwich. Or by itself…from the bowl.

Recipe

Ingredients

4 cups shredded extra sharp Cheddar chese

1 (7 oz) jar diced pimentos, drained

2/3 cup mayonnaise (preferably Duke’s)

Juice of 1 lemon

1 Tbsp Worcestershire sauce

Generous dash of hot sauce

Freshly ground pepper

Directions:

Place all ingredients in a bowl and mix well with a fork. Cover and refrigerate for 1 hour before serving.

That’s it. When your directions are only two sentences that means it’s easy. Enjoy!
