I love cupcakes. All kinds of cupcakes. So you will probably find more cupcake recipes to come on here. Cupcakes remind me of childhood. They don’t take themselves too seriously. Not like a big fancy cake. And anyone can make a cupcake! They are a “party” food right? I found this cupcake recipe on Pinterest which led me to Fickleberry Finds. I found it years ago and have printed it out and kept it in my recipe binder since.
It’s a great go-to. It isn’t hard to make and this icing…sweet Lord. It’s good! So if you don’t have time to make the cupcake, just make the icing and eat it from the bowl. Kidding. Not kidding.
Recipe
MOCHA CUPCAKES
1 cup sugar
1/2 cup cold brewed coffee
1/2 cup vegetable oil
2 eggs
3 teaspoons cider vinegar
3 teaspoons vanilla
1-1/2 cups flour
1/3 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
Beat the coffee, sugar, oil, eggs, vanilla, and vinegar together in a large bowl. Separately, in a small bowl, combine the flour, baking soda, salt, and cocoa. Combine wet and dry mixtures until well blended.
Fill paper-lined muffin cups 2/3 full. Bake at 350* for about 20 minutes. Allow cupcakes to cool before frosting.
ESPRESSO BUTTERCREAM FROSTING
2 sticks butter
2 cups powdered sugar
1 1/2 teaspoons vanilla
1 1/2 teaspoons espresso powder OR 1 packet Starbucks VIA
Mix the espresso powder or Starbuck’s packet into the vanilla and set aside.
Blend together the butter and powdered sugar. Add the espresso mixture and continue to mix until well blended. (I used a pastry bag with a pastry tip that has a big hole in it…lol there’s probably a specific tip # known by professional bakers but you know what I mean…to put the frosting on the cupcakes, but you could just use your kitchen knife or spatula).
