It’s a new year (Thank the Lord!) and of course that means that I am on the track of trying to be better and eat better. I am back on the intermittent fasting and low carb plan and so far it’s going well.
My problem is finding foods that keep things interesting. You know what I mean. So I ran across these…chaffles. And the fact that I got to use my new cute little mini waffle maker…well that sealed it!
These are soooo simple and could be made a lot of different ways. My first go was the basic chaffle which is just egg and cheese. Seriously. That’s it. Some recipes called for a couple of tablespoons of almond flour, which you could add, but it came out great without it.
So here’s the deal. Whisk one egg and add about 1/4-1/2 cup of shredded cheese. Of course using low skim, fat free, etc. helps your plan. If using the mini waffle maker, heat it up, pour in half of your mixture and cook for around 3-4 minutes. Then finish up with the rest of the mixture and you now have two chaffles. I used mine to make a sandwich with fresh spinach, tomato and a little mayo. With salt and pepper…yep it was good.
