As I write this post, only a month or so has passed since Chrissy Teigen and her husband John announced the loss of their child. They made their announcement in a raw and unfiltered way through a heart wrenching post and photos. No matter if you are a fan of Chrissy Teigen and her husband, or if you even know who they are, if you saw their posts, your heart would break for them.
I believe that until your own world has been affected by infant loss and miscarriage, you just don’t understand. Your heart goes out to those who you hear experience the loss, but you just don’t understand the level of grief and heartbreak that a woman and their family goes through until you’ve walked that path. Many times, there is no public announcement of a loss…many times just the parents and their family and close friends know.
I am sharing one of Chrissy Teigen’s recipes from her recipe book in this post. I made this recipe a while ago, but never shared it. I hope that you will give this recipe a try (it’s good!) and when you do, I hope you will say a prayer for all of the families who have been affected by the loss of a child. Whether you know someone or not, say a prayer that anyone facing that incredible loss in their lives will be comforted. If you do know of someone, maybe make this recipe for them and take it to them to show your support and love. October is Infant and Pregnancy Loss Awareness Month. Chrissy Teigen’s Banana Bread

2 cups mashed very ripe bananas
4 eggs
2⁄3 cups canola oil, plus a little more to grease the pan
2 cups all-purpose flour, plus a little more for dusting the pan
2 cups sugar
1 (3.5-ounce) box vanilla instant pudding mix
1 teaspoon baking soda
1½ teaspoons kosher salt
1 cup unsweetened shredded coconut
1 (3.5-ounce) bar dark chocolate, chopped into chunks
Salted butter, for serving
Directions
- Preheat oven to 325°F and grease and flour a bundt pan.
- In a large bowl, combine the mashed bananas, eggs, and oil.
- In a separate bowl, stir together the flour, sugar, pudding mix, baking soda, and salt.
- Add dry ingredients to wet and stir together gently but thoroughly. Fold in coconut and chocolate chunks.
- Pour batter into prepared pan and bake until a toothpick inserted into the center comes out clean, 60-80 minutes.
- Let cool slightly in the pan, then run a butter knife around the sides and center of the pan to release onto a plate.
- Let cool before slicing. Serve with salted butter and enjoy!
