Instant Pot Parmesan Ranch Chicken & Potatoes

When the weather turns colder, my comfort food radar kicks in and I am compelled to make all of the comfort foods! And you know what helps? A crock pot and an Instant Pot. Time saving! You can just throw something in a crockpot when you leave for work in the morning and like magic when you get home, dinner is ready. And with the invention of the Instant Pot, your recipe cook times are automatically cut at least in half!

This Instant Pot recipe is a simple one, but most good comfort foods are right? You can add a salad or maybe green beans and you have dinner! I found this recipe on Six Sisters Stuff blog..you will notice I make alot of their recipes. Check out their website!

You can change up the flavor too by substituting a couple of tablespoons from a packet of dry Italian dressing mix. Add this one to your recipe box!

This recipe for Instant Pot Chicken and Potatoes is a great go to recipe for the Fall and Winter!

Ingredients

  • 1 1/2 pounds chicken breasts

  • 3 pounds of baby red potatoes (can use any potatoes you have )

  • 1/4 cup olive oil

  • 1 tsp salt

  • 3/4 tsp ground black pepper

  • 1 1/2 teaspoon garlic powder

  • 1 1/2tsp dried thyme

  • 1/2 teaspoon dried basil

  • 1/2 teaspoon dried oregano

  • 1 (1 ounce) packet dry Ranch dressing mix (divided)

  • 1 (15 ounce) can chicken broth

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup melted butter

Directions

  • Add chicken and potatoes to Instant Pot and drizzle with olive oil. Toss chicken and potatoes until they are coated with oil.
  • In a small bowl, mix together salt, pepper, garlic powder, thyme, basil, oregano, and 2 Tablespoons of the dry ranch dressing mix. Sprinkle seasonings over chicken and potatoes, then toss gently to coat.
  • Pour chicken broth into the Instant Pot (try to pour it to the sides of the chicken and potatoes so that you don’t rinse off the seasonings).
  • Place the lid on top of the Instant Pot and set the valve on top to sealing. Press the “MANUAL” button (Your Instant Pot may say “Pressure cook)” and set the timer for 16 minutes.
  • Remember that it will take 10-15 minutes for the Instant Pot to come to pressure, so be sure to plan accordingly!
  • When the Instant Pot is finished cooking, do a “quick release” of the pressure. Remove the chicken and potatoes to a large bowl or serving platter.
  • In another small bowl, mix together remaining ranch dressing mix, Parmesan cheese, and melted butter. Drizzle butter/seasoning mix over the chicken and serve.
