Hawaiian Meatballs Freezer Meal

When my daughter had her second baby I looked for ways to help. Of course helping out with meals is one way to help out so they could have ready meals available to them that were already prepped to cook. Freezer meals are a great way to prepare in advance and this recipe can be made in the instant pot or a crock pot. This recipe can be served with rice. It can also be served as an appetizer!

The recipe gives instructions for the Instant Pot but check out the notes for the instructions on cooking in a crock pot.

Ingredients

  • 32 ounce bag of frozen meatballs

  • 20 ounce can of pineapple chunks

  • 1 red bell pepper diced

  • 1 cup brown sugar

  • 2/3 cup of white vinegar

  • 2 tablespoons soy sauce

Directions

  • Place meatballs in the bottom of the Instant Pot. Top with the pepper and undrained pineapple chunks.  Add brown sugar, vinegar and soy sauce.

  • Place the lid on the Instant Pot and turn the knob to SEALING.

  • Push PRESSURE COOK or MANUAL and set the timer for 7 minutes.

  • Turn the knob to VENTING when it is done counting down. Remove the lid, stir, and serve over rice.
  • How to turn this into a freezer meal:
    Place meatballs, pineapple chunks with juice, red bell pepper, brown sugar, white vinegar, and soy sauce into a gallon-sized freezer bag. Place freezer bag into freezer and it will last up to 90 days. I found these cool freezer bag holders on Amazon that help hold your bags up while you fill them.

    When ready to use, dump ingredients from frozen bag into Instant Pot and add 1 cups of beef broth or water in with the frozen food.
    Place the lid on top, move the valve to SEALING, and press the MANUAL button. Set timer for 7 minutes. Do a QUICK RELEASE when the timer is done.

Notes

  • To cook in crockpot…dump your ingredients in the crock pot and cook on low for 3-4 hours. If adding ingredients from the freezer, extend cooking time to 6-8 hours.
