Rose Beef Bites

“Rose” Beef Bites

These were a cute appetizer we made for my daugher’s baby shower. Easy, pretty (once you get the hang of rolling roast beef to look like a rose) LOL! They would be a great appetizer for any gathering and if your event or party isn’t something like a baby or wedding shower or a tea party, you can skip the rose creation and just pile your roast beef strips on the toast. Tasty either way!

Rose Beef Bites

Ingredients

  • thin sliced deli roast beef

  • baguette or baguette toast points

  • peppery arugula

  • sour cream

  • grated horseradish

  • salt and pepper

Directions

  • Make your horseradish cream by mixing 1/2 cup sour cream with a tablespoon of grated horsereadish. Add salt and pepper to taste.
  • Slice the baguette, butter and toast.
  • Tear your roast beef slices into thin strips.
  • Roll the roast beef strip from one end to form a roll…gently pull some of the layers out to make the roll look like a rose
  • Spread the baguette with horseradish cream. Place beef rosette on the toast and add a spring of arugula.
