Mandarin pomegranate chopped kale salad topped with feta cheese, crunchy pecans, and lemony poppyseed dressing is easy, healthy, and incredibly delicious.

Ingredients

  • 1 can mandarin oranges in light syrup – drained

  • ½ cup pomegranate jewels/seeds

  • 6-8 cups finely chopped kale

  • ½ cup crumbled feta cheese

  • ½ cup chopped pecans

  • Dressing
  • ⅔ cup mayo

  • ½ cup Half & Half – or other milk, see note

  • 6 tablespoons sugar

  • juice of ½ medium lemon – (about 3 tablespoons)

  • 1 tablespoon oil

  • 4 teaspoons poppy seeds

Directions

  • Combine kale, mandarin oranges, pomegranate jewels, feta cheese, and pecans in a large bowl.
  • Whisk together all dressing ingredients until smooth.
  • Add dressing to salad bowl and toss to combine and to coat well. Cover and chill for about 10 minutes for best flavor (can be served immediately as well).

Notes

  • Milk: any percentage of milk will work- the higher the percentage, the creamier your dressing will be.
