Mandarin Pomegranate Chopped Kale Salad

Ingredients
1 can mandarin oranges in light syrup – drained
½ cup pomegranate jewels/seeds
6-8 cups finely chopped kale
½ cup crumbled feta cheese
½ cup chopped pecans
- Dressing
⅔ cup mayo
½ cup Half & Half – or other milk, see note
6 tablespoons sugar
juice of ½ medium lemon – (about 3 tablespoons)
1 tablespoon oil
4 teaspoons poppy seeds
Directions
- Combine kale, mandarin oranges, pomegranate jewels, feta cheese, and pecans in a large bowl.
- Whisk together all dressing ingredients until smooth.
- Add dressing to salad bowl and toss to combine and to coat well. Cover and chill for about 10 minutes for best flavor (can be served immediately as well).
Notes
- Milk: any percentage of milk will work- the higher the percentage, the creamier your dressing will be.
